Server / waiter

Servers look after a section of tables from greeting to bill. They sell the menu, take orders accurately, handle allergies, time courses with the kitchen and turn a meal into an experience. It is sales, theatre and logistics at once.

A real shift

Pre-shift briefing on specials, eighty-sixed dishes and allergens, then set-up and polishing. Service is a loop of greeting, ordering, checking back, clearing and billing across several tables, with side work and resets at the end.
