Chef de rang

In a brigade dining room the chef de rang owns a station of tables and leads its service, supported by a commis. They take orders, guide guests through the menu and carry out tableside work.

A real shift

Brief, check the station and allocate tasks to the commis. Service brings ordering, wine coordination with the sommelier, tableside carving or finishing, and keeping a calm rhythm on every table.
