A concept defines what a venue is, who it's for and why it should exist. It covers food and drink, price point, service style, design, music, location and the feeling guests leave with. A clear concept guides every decision, from the menu and uniforms to hiring and marketing, and helps teams know what good looks like. Strong concepts usually come from something authentic, such as a cuisine the founder grew up with, a gap in the local market or a particular way of hosting.
Copying a successful venue rarely works, because the original has history, people and timing that can't be replicated. Testing ideas through pop-ups, supper clubs, market stalls or residencies lets operators gather feedback and build a following before committing to a lease. Concepts need to evolve as tastes change, but drifting too far confuses regulars. The best test is whether someone can explain your venue to a friend in a single sentence and make them want to go.
What we ask on the show
- Can you describe your venue in one sentence?
- Did your concept start as a pop-up or a dream?
- When should a concept change, and when should it stay put?
- What's the most original concept you've seen in the UK?
