Cash is now a small share of takings in many venues, but it is still where most opportunistic theft happens, alongside comps, voids, sweethearting and free pours. Controls include individual POS logins, manager authorisation for voids and refunds, blind cash-ups, CCTV over tills and regular variance checks.
The aim is to protect honest staff as much as the business, since vague systems make everyone a suspect. Accusations should follow a fair investigation and disciplinary process, never a shout in the office at close.
What we ask on the show
- What's the most creative fiddle you've seen?
- Do blind cash-ups feel like distrust?
- How do you investigate till shortages fairly?
