Cocktails

Cocktail craft is fundamentally about balance: spirit strength, sweetness, acidity, bitterness and dilution held in proportion, with measure, ice and technique controlling each one. Shaking aerates and chills hard, stirring gives a silkier texture, and the size and dryness of the ice decide how much water ends up in the glass. Classics such as the daiquiri, old fashioned, negroni and martini are the benchmarks bartenders are judged on, because there is nowhere to hide in three ingredients. Modern bars use batching, pre-dilution, clarified juices, house cordials, ferments and rotary evaporators to serve complex drinks quickly and consistently at volume.

Good bars also think about waste, using citrus husks and trim in stocks and cordials, and about low and no-alcohol options that are designed with the same care. Measures must follow weights and measures rules for certain spirits, and responsible service still applies however beautiful the drink. Ice quality remains the most underrated ingredient behind any bar.

What we ask on the show

  • What's the classic cocktail every bartender should master first?
  • How has batching changed service in busy bars?
  • How do you make no and low drinks as exciting as the full-strength list?
  • Why does ice matter so much?
